Super easy and totally delicious.
You’ll need the following ingredients:
1 onion (sliced)
2 garlic cloves (peeled whole)
750ml chicken or vegetable stock
Salt and pepper
150ml cream (optional)
Cut the pumpkin in half to scrape out the seeds, then in to quarters to cut off the skin. Cut the pumpkin into 3cm / 2.25″ chunks.
Place the pumpkin, onion, garlic, stock and water in a pot and don’t worry if the liquid doesn’t cover the pumpkin. Bring to the boil then reduce heat and simmer until pumpkin is tender.
Remove from heat and very carefully blend using either a stick blender or liquidiser to blend until smooth.
Season to taste with salt and pepper and if preferred, stir through cream.
Ladle soup into bowls, drizzle over a bit of cream, sprinkle with pepper and parsley and serve with crusty bread. Enjoy!
